- 1 pound zucchini, diced (about 1/4-inch cubes)
- 6 large eggs
- ¼ cup whole milk
- 4 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 2 ounces smoked deli ham, diced
- 1 1 scallion, sliced
- 1 Salt and pepper, to taste

Cook eggs just until set so they stay tender instead of rubbery.
- Preheat your oven to 350°F. Grease an 8x8-inch or similar-sized baking dish with the butter.
- Dice the zucchini into small 1/4-inch cubes and set aside. Dice the ham and slice the scallion.
- In a large mixing bowl, whisk together the eggs and whole milk until well combined.
- Add the softened cream cheese to the egg mixture and whisk until mostly smooth with only small bits of cream cheese remaining.
- Stir in the shredded cheddar cheese, diced zucchini, diced ham, and sliced scallion. Season generously with salt and pepper to taste.
- Pour the mixture into the prepared baking dish and spread evenly.
- Bake for 28-32 minutes, until the eggs are fully set in the center and the top is lightly golden brown. A knife inserted in the center should come out clean.
- Cook eggs just until set so they stay tender instead of rubbery.
- Remove from the oven and let cool for 5 minutes before slicing into portions. Serve warm or refrigerate for meal prep.
