10 servings- 6 tbsp powdered sweetener
- 2 to 4 tbsp allulose (or xylitol)
- ½ tsp glucomannan ((can sub xanthan gum, see notes))
- ¾ cup heavy cream
- 1 tbsp lemon zest
- ½ cup freshly squeezed lemon juice
- 4 large egg yolks
- 3 tbsp butter (chilled and cut into pieces)
- ¾ tsp lemon extract
- 1 cup full fat sour cream
- 1 keto pie crust (fully baked)

Cook eggs just until set so they stay tender instead of rubbery.
- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Whisk together powdered sweetener, allulose, and glucomannan in a large heavy saucepan.
- 2. Add cream, egg yolks, lemon zest, and lemon juice, then whisk to combine and set over medium heat, whisking frequently for 7–10 minutes until thickened (watch carefully to prevent curdling).
- 3. Remove from heat, whisk in chilled butter pieces and lemon extract, then let cool to room temperature.
- 4. Whisk in sour cream until smooth and lump-free, pour into the fully baked pie crust, and refrigerate at least 4 hours (or overnight) until set.
- Cook eggs just until set so they stay tender instead of rubbery.
- 5. Top with lightly sweetened whipped cream before serving.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
