- 3 tbsp powdered sweetener
- 3 tbsp / 40g coconut butter (melted, or use coconut cream)
- 2 cup / 200g desiccated coconut (unsweetened)
- 1 tsp vanilla extract (optional)
- ⅓ cup sugar free chocolate chips (60g)

Cook eggs just until set so they stay tender instead of rubbery.
- 1. Preheat oven to 180°C/350°F for electric ovens or 160°C/320°F for fan ovens.
- 2. Beat egg whites in a clean, dry glass or ceramic bowl with an electric mixer until stiff peaks form, then whisk in powdered sweetener until fully blended.
- 3. Mix in melted coconut butter and vanilla extract, then fold in the desiccated coconut until evenly combined.
- 4. Use a cookie scoop or your hands to form balls with flat bottoms and arrange on a parchment-lined baking sheet.
- 5. Bake for 15-18 minutes until tops are lightly golden, then remove and cool completely.
- Cook eggs just until set so they stay tender instead of rubbery.
- 6. Melt chocolate chips in 30-second microwave bursts or a double boiler, dip each cooled macaroon into chocolate, and refrigerate on parchment until chocolate sets firm.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
