What you need

3 servings- 1 lb flat iron steak (or flank steak or sirloin, fat removed, 450g)
- salt and black pepper
- 2 tbsp light olive oil (or avocado oil, for frying)
- 1 tbsp fresh ginger (minced)
- 3 cloves garlic (minced)
- ¼ teaspoon red pepper flakes (or chili flakes)
- ⅓ cup tamari (or medium soy sauce or coconut aminos, 80ml)
- ¼ cup water (60ml)
- 2 tbsp brown erythritol (or more, to taste)
- 1 red bell pepper (sliced (110g))
- 2 large spring onions (finely sliced (50g))
- ½ tsp toasted sesame seeds
- drizzle of toasted sesame oil (optional)

Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Slice the steak against the grain into thin 1/2 cm strips (easiest when meat is partially frozen), then season with salt and black pepper.
- 2. Heat oil in a large wok or frying pan until very hot, then sear the beef strips for 4 minutes undisturbed before flipping and cooking 1-2 minutes more until just cooked through; set aside.
- 3. In the same pan, sauté the minced ginger, garlic, and red pepper flakes for 1 minute until fragrant.
- 4. Add the tamari, sweetener, and water to the pan, bring to a boil, then reduce heat to medium and simmer for 3-4 minutes until the sauce reduces.
- 5. Return the beef to the pan along with the sliced bell peppers and cook for 2-3 minutes until peppers are tender-crisp.
- Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- 6. Remove from heat, stir in the spring onions, and top with sesame seeds and an optional drizzle of toasted sesame oil before serving.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
