- ⅓ cup egg white protein powder (or coconut flour)
- 2 large eggs
- 1 cup pork panko
- 1 teaspoon dried oregano
- ½ teaspoon salt (optional: if cheese sticks are already salty leave this out)
- Avocado or coconut oil spray

Cook pork to 145F, then rest it for 3 minutes before slicing.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Cut 12 string cheese sticks in half crosswise to create 24 shorter pieces, then freeze on a tray for at least 30 minutes.
- 2. Set up three shallow dishes: one with egg white protein powder (or coconut flour), one with 2 whisked eggs mixed with salt, and one with pork panko combined with oregano.
- 3. Remove cheese from freezer and coat each stick first in the powder (dip in water first if powder won't adhere), then in the egg mixture, and finally in the pork panko blend.
- 4. Arrange coated sticks on a parchment-lined baking sheet and freeze for at least 1 hour or overnight to prevent the cheese from melting too quickly during baking.
- 5. Heat oven to 425°F, spray the frozen sticks and pan with avocado or coconut oil, then bake on the lower rack for 6 to 8 minutes until golden and heated through.
- Cook pork to 145F, then rest it for 3 minutes before slicing.
- 6. Let the sticks rest for 3 minutes before serving warm with sugar-free marinara for dipping.
