- ¼ oz Gelatin
- 2 cups Heavy Cream
- ¼ cup Erythritol
- 2 teaspoons Vanilla Essence
- ½ cup Berries (strawberries, blueberries, raspberries, to serve)

- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Sprinkle gelatin over water in a small bowl and let stand 5 minutes to bloom.
- 2. Warm heavy cream, erythritol, and vanilla essence in a saucepan over medium heat until simmering, then remove from heat.
- 3. Whisk the softened gelatin into the hot cream mixture until fully dissolved; if needed, return to gentle heat to help dissolve, but do not boil.
- 4. Divide the mixture evenly among 4 serving glasses and chill in the refrigerator for 3-4 hours until fully set.
- 5. Garnish each portion with fresh berries before serving.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
