- 1 cup / 250g peanut butter (runny, not firm ***see notes)
- ½ cup / 120ml almond milk
- ½ cup / 100g granulated sweetener
- 1 cup / 100g almond flour
- ¼ cup / 30g coconut flour
- 1 tbsp baking powder
- 1 tsp sea salt (only if your peanut butter is unsalted)

Cook eggs just until set so they stay tender instead of rubbery.
- 1. Preheat oven to 350°F and line a loaf pan with parchment paper.
- 2. Beat eggs with an electric mixer or food processor for about 2 minutes until fluffy, light in color, and doubled in volume.
- 3. Add granulated sweetener, runny peanut butter, and almond milk to the whipped eggs; blend until smooth and well combined.
- 4. Stir together almond flour, coconut flour, salt (if peanut butter is unsalted), and baking powder in a separate bowl, then mix into the wet ingredients until thoroughly incorporated.
- 5. Wait 3 minutes for coconut flour to absorb moisture, then check batter consistency and adjust with additional coconut flour or almond milk as needed to achieve a soft batter.
- 6. Pour batter into prepared loaf pan and bake for about 60 minutes, loosely covering the top with foil after 45-50 minutes if it's already golden brown to prevent burning.
- Cook eggs just until set so they stay tender instead of rubbery.
- 7. Cool completely in the pan before slicing and serving.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
