What you need

2 servings- 2 tsp olive oil
- 4 boneless chicken thighs (370g / 13 oz)
- 1 tbsp ginger (grated (6g))
- 1 garlic clove (minced)
- 1 medium red chilli (diced (14g))
- 1 ¾ cup chicken broth (400ml)
- 1 tbsp coconut aminos
- 1 tbsp toasted sesame oil
- 2 ¾ oz mushrooms (80g, I used shiitake)
- 2 large eggs
- 3 ½ oz konjac noodles (100 g, or kelp noodles)
- 1 small bok choy (halved (100g / 3.5 oz))
- 1 zucchini (sliced with a julienne peeler (150g))
- 2 tbsp scallions (green part, sliced fine (10g))
- 1 tsp sesame seeds (option to toast)

Cook until the thickest piece reaches 165F and the juices run clear.
- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Coat a griddle or nonstick pan with 1 teaspoon oil and season chicken thighs with salt and pepper; cook 4-5 minutes per side until done to your preference.
- 2. In a separate saucepan, warm remaining 1 teaspoon oil over medium heat and cook ginger, garlic, and chilli for 2 minutes until softened.
- 3. Pour in broth, add mushrooms, coconut aminos, and sesame oil; let simmer 3 minutes on medium-low to meld flavors.
- 4. Meanwhile, boil eggs in plenty of water for 6.5 minutes for firm whites and soft yolks; transfer to cold water with a slotted spoon, cool 30 seconds, then peel.
- 5. Just before serving, add konjac noodles, julienned zucchini, and bok choy to the broth; simmer 1-2 minutes until bok choy reaches al dente.
- 6. Halve the eggs and season with salt and pepper; adjust broth seasoning if needed.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 7. Divide soup between bowls and top with sliced chicken, egg halves, scallions, and sesame seeds.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
