6 servings- 1 ½ pounds ground lamb or beef ((24 oz/680 g))
- ½ cup diced onion
- 1 medium carrot, rolled ((4 oz/113 g))
- 1 medium turnip, peeled and cubed
- 1 tsp Better Than Bouillon Beef Base
- 2 tsp Worcestershire Sauce
- 1 tbsp tomato paste
- 1 tbsp dried porcini powder ((optional))
- 1 tsp dried thyme
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp xanthan gum ((optional))
- 2 cups water or unsalted beef broth
- ¼ cup chopped fresh parsley
- 1 pound cauliflower floretes (steamed until tender)
- 2 oz soft cream cheese
- ¼ cup sour cream
- 1 cup grated Gruyere Cheese ((or white cheddar or Monterey Jack))
- ½ cup sliced scallion tops
- ¼ tsp each, salt and white pepper

Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- 1. Brown the ground lamb in a cold skillet over medium heat, breaking it into small uniform pieces as it cooks, then increase heat to medium-high.
- 2. Add diced onion, rolled carrot, cubed turnip, beef base, Worcestershire sauce, tomato paste, the mixed spices (including optional porcini powder and xanthan gum), and water or broth; stir well and bring to a simmer.
- 3. Cover and simmer over low to medium-low heat for 20 minutes until vegetables are tender, then uncover and reduce until gravy thickens and clings to ingredients; stir in parsley.
- 4. While filling simmers, steam cauliflower florets until tender (about 8 minutes in microwave), then process until smooth with cream cheese, sour cream, salt, and white pepper.
- 5. Preheat oven to 375°F and stir grated Gruyere and sliced scallion tops into the mashed cauliflower.
- 6. Transfer the meat filling to a greased 9½×2½-inch casserole dish, spread the cauliflower topping evenly to the edges, and optionally sprinkle with additional cheese.
- Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- 7. Place casserole on a sheet pan and bake for 40-50 minutes until hot and bubbly, then broil briefly if desired for browning.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
