- Prep and chill the ingredients before assembling so the finished dish stays crisp and cold.
- 1. Line a small container with parchment and combine almond flour, 2-3 tablespoons sweetener, 1/2 cup heavy cream, and 1 teaspoon vanilla in a bowl, then press the mixture evenly into the container.
- 2. Melt 4 tablespoons salted butter in a medium saucepan over medium heat, add 3 tablespoons sweetener, and cook for 3-4 minutes, stirring constantly to prevent burning, until the sweetener dissolves and the butter browns.
- 3. Stir in 1/2 cup heavy cream and 1 teaspoon vanilla, bring to a boil, then reduce to a simmer and cook for about 8 minutes, stirring regularly, until the caramel is thick, glossy, and golden.
- 4. Pour the caramel over the nougat layer, scatter 1/4 cup peanuts on top, and press them gently into the caramel.
- 5. Freeze for 40-50 minutes, then slice into bars and return to the freezer while preparing the chocolate.
- 6. Melt 1/2 cup plus 1 tablespoon chocolate chips with 1 tablespoon coconut oil in a double boiler or microwave (30-second bursts, then 10-second intervals), stir, and let cool slightly.
- 7. Dip each frozen bar into the melted chocolate until fully coated, then refrigerate until the chocolate hardens.
- Taste before serving and adjust the salt, lemon, vinegar, or herbs so the flavors stay bright.
