- 12 ounces spicy Italian sausage
- 1 cup diced celery
- ½ cup diced onion
- 2 garlic cloves (minced)
- 1 teaspoon dried sage
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- ½ cup low sodium chicken broth
- 2 large eggs
- ¼ cup heavy cream

Cook until the thickest piece reaches 165F and the juices run clear.
- 1. Make the skillet bread 1-2 days ahead, cube into ½-inch pieces, spread on a baking sheet, and dry in a 200°F oven for 2-3 hours, then leave out overnight to continue drying.
- 2. Preheat oven to 350°F and butter a 9×13-inch baking dish.
- 3. Cook the sausage in a large skillet over medium heat for about 6 minutes, breaking it into small pieces, then transfer to a large bowl with a slotted spoon.
- 4. Sauté celery, onion, garlic, sage, salt, and pepper in the same skillet until tender (about 5 minutes), add to the bowl with sausage, then toss in the dried bread cubes.
- 5. Whisk together eggs, cream, and chicken broth, pour over the bread mixture, mix thoroughly, and spread into the prepared baking dish.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 6. Bake uncovered for 35 minutes until the top is crusty and browned.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
