- ½ cucumber (seeded and cut into long thin strips)
- avocado (thinly sliced)
- 2 cups cauliflower rice (prepared and chilled)
- 3 ounces cream cheese (softened)
- ½ tablespoon rice vinegar
- ½ pound Cooked shrimp peeled and tails removed cut into pieces
- 2 tablespoons mayonnaise
- 2 teaspoons sriracha sauce

Cook shrimp just until pink and opaque so they stay juicy.
- Prep and chill the ingredients before assembling so the finished dish stays crisp and cold.
- 1. Mix the cold cauliflower rice with rice vinegar and softened cream cheese in a bowl until well combined.
- 2. Set one seaweed sheet on a bamboo rolling mat and spread a layer of the cauliflower mixture across the bottom third of the sheet.
- 3. Arrange avocado slices, cucumber strips, and shrimp pieces in a line along the bottom edge of the cauliflower layer.
- 4. Roll the seaweed tightly around the filling to create a compact cylinder.
- 5. Refrigerate the completed rolls until chilled, then slice into portions.
- Cook shrimp just until pink and opaque so they stay juicy.
- 6. Whisk together mayonnaise and sriracha for the sauce, then drizzle over the sliced sushi before serving.
- Taste before serving and adjust the salt, lemon, vinegar, or herbs so the flavors stay bright.
