- 1 tbsp olive oil
- 1 small yellow onion (chopped)
- 1 ⅛ lb turkey mince (500g )
- 1 red bell pepper (diced into small cubes (approx 1 cup))
- 2 sticks celery (128g / 4.5 oz)
- 2 cloves garlic (minced)
- 1 tsp red chilli (finely diced or to taste)
- 1 tsp cumin (heaped)
- 1 tsp cilantro powder (heaped / approx 1 1/4 tsp measured)
- ¼ tsp mild chilli powder
- 14 oz chopped tomatoes (from a tin) (400g)
- 2 tbsp tomato puree
- 1 cup chicken or turkey stock (250 ml)
- 1 tbsp balsamic vinegar
- 1 tsp coconut aminos
- ¼ tsp cracked black pepper (or to taste)
- ½ tsp salt (or to taste)
- ½ bunch fresh coriander / cilantro
- 1 avocado
- 2 tbsp sour cream

Cook until the thickest piece reaches 165F and the juices run clear.
- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Warm the olive oil in a large non-stick skillet or cast iron pan over medium-low heat, then cook the chopped onion for about 3 minutes until softened and lightly browned.
- 2. Add the ground turkey and continue cooking for 3-4 minutes, breaking it up with a spoon until no pink remains.
- 3. Stir in the diced bell pepper, celery, minced garlic, fresh chili, cumin, cilantro powder, and chili powder, cooking for another 3 minutes over medium heat.
- 4. Pour in the canned tomatoes, tomato puree, stock, balsamic vinegar, and coconut aminos, then season with salt and pepper.
- 5. Cover the pan and let the chili simmer for approximately 30 minutes until the sauce thickens and reduces; remove the lid during the final minutes if you prefer a drier consistency.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 6. Taste and adjust seasoning as needed, then serve topped with avocado slices, fresh cilantro, sour cream, and lime wedges.
