- ½ cup unsweetened almond milk
- ¼ cup avocado oil
- 1 teaspoon vanilla extract
- 1 1¾ cups almond flour
- ⅓ cup unflavored whey protein powder
- ¼ cup Swerve Granular (or preferred granulated keto sweetener)
- 2 teaspoons baking powder
- ¼ teaspoon salt

Cook eggs just until set so they stay tender instead of rubbery.
- Crack the eggs and separate the egg whites into a large mixing bowl. Add the whole eggs, almond milk, avocado oil, and vanilla extract. Whisk everything together until fully combined and smooth.
- Add the almond flour, whey protein powder, granulated sweetener, baking powder, and salt to the wet ingredients. Whisk thoroughly until the batter is smooth with no lumps. Allow the batter to rest for 5 minutes to thicken slightly.
- While the batter rests, preheat your waffle iron according to manufacturer instructions. Lightly grease the waffle iron plates with cooking spray or a small amount of oil.
- Pour approximately 1/3 cup of batter into the center of the preheated waffle iron for standard round waffles, or about 1/4 cup per section for mini waffle makers. Close the lid gently.
- Cook until the waffles are puffed, golden brown on both sides, and steam stops escaping from the waffle iron, typically 3-5 minutes depending on your appliance. Remove carefully and repeat with remaining batter.
- Cook eggs just until set so they stay tender instead of rubbery.
- For extra crispy waffles, place cooked waffles on a wire rack set over a baking sheet and keep warm in a 200°F oven for 10 minutes. Serve warm with your favorite keto-friendly toppings.
