- 1 ½ lb ground beef
- 1 tsp salt (divided)
- ½ tsp pepper
- ¼ tsp red pepper flakes
- 15 ounces full-fat ricotta
- ½ cup grated parmesan
- ½ cup chopped fresh basil
- 1 large egg
- 2 cloves garlic (minced)
- 1 ½ cups crushed or pureed tomatoes
- 1 tbsp olive oil
- 12 ounces shredded mozzarella

Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Heat your grill to medium temperature and slice zucchini lengthwise into planks no thicker than 1/4 inch using a mandolin.
- 2. Grill the zucchini planks for 3 to 5 minutes per side until tender and much of their moisture has cooked off, then set aside to cool.
- 3. Brown the ground beef in a large skillet over medium heat for 7 to 10 minutes, breaking it into crumbles, then season with 3/4 teaspoon salt, pepper, and red pepper flakes before stirring in the crushed tomatoes.
- 4. Combine ricotta, parmesan, basil, egg, garlic, and remaining 1/4 teaspoon salt in a bowl and mix thoroughly.
- 5. Heat oven to 350F and oil a 9x13 inch baking dish, then build three identical layers starting with zucchini, ricotta mixture, meat sauce, and a portion of mozzarella, reserving some cheese for the top.
- Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- 6. Bake uncovered for 30 minutes until bubbling throughout, then rest for 10 minutes before slicing and serving.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
