- 2 whole Cooked lobsters ((3-4 pounds total))
- 3 tbsp Unsalted butter
- 1 medium Shallot ((diced))
- 2 cloves Garlic ((minced))
- 1 cup White wine
- 1 cup Heavy cream
- ½ tsp Sea salt
- ¼ tsp Black pepper
- 1 ¾ cups Parmesan cheese ((divided into 3/4 cup grated and 1 cup shredded))
- 1 tbsp Dijon mustard
- ¼ cup Fresh parsley ((chopped; plus more for garnish))
- 1 tbsp Fresh tarragon ((chopped))
- Lemon wedges ((optional, for serving))

- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Set your oven to broil on high, reaching 500-550°F.
- 2. Twist off the lobster claws, crack them to extract the meat, then cut each lobster in half lengthwise and rinse out any tomalley; remove all meat from the shells and chop into small chunks.
- 3. Melt butter in a large skillet over medium heat, add shallot and garlic, and sauté for about 5 minutes until softened.
- 4. Pour in the white wine, scraping the pan bottom to deglaze, and simmer for 2 minutes.
- 5. Add heavy cream, salt, and pepper, then simmer for 5-6 minutes until reduced by half.
- 6. Stir in grated Parmesan until melted and thickened, then mix in mustard, parsley, and tarragon.
- 7. Add the chopped lobster to the sauce, stir to coat, then divide the mixture among the 4 lobster shells on a sheet pan.
- 8. Top each filled shell with shredded Parmesan and broil on the top rack for 5 minutes until the cheese is melted and golden brown, then garnish with parsley and serve with lemon wedges.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
