4 servings- 3 large egg whites
- 9 tbsp almond flour (54g, use 8.5 tbsp if your almond flour is super fine)
- ¾ tsp psyllium husk powder
- ¾ tsp baking powder
- 1 ½ tbsp water
- 3 tbsp olive oil
- 1 garlic clove (minced, or 1/2 tsp garlic powder)
- ⅓ - 1/2 tsp flaked sea salt to taste
- ¼ tsp black pepper
- 1 tbsp dried Italian herbs

Cook eggs just until set so they stay tender instead of rubbery.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Heat your oven to 375°F (190°C) conventional or 340°F (170°C) convection.
- 2. Whisk together the egg whites, almond flour, psyllium husk powder, baking powder, and water in a bowl using a fork.
- 3. Grease a 5x5-inch microwave-safe container, pour in the batter, and microwave on high for 3 minutes.
- 4. Let the bread cool completely, then cut into 30 small cubes.
- 5. Toss the cubes with olive oil, minced garlic, salt, pepper, and Italian herbs in a bowl.
- Cook eggs just until set so they stay tender instead of rubbery.
- 6. Spread on a baking sheet and bake for 20-25 minutes, flipping once, until crisp and golden.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
