- ½ cup ricotta (120g)
- 1 tsp xanthan gum
- ½ tsp psyllium husk powder
- 2 tbsp coconut flour (20g)
- ⅓ cup grated parmesan (42g)
- Salt to taste
- 4 tbsp butter
- 2 garlic cloves (minced)
- 10 sage leaves
- Salt and pepper

Cook eggs just until set so they stay tender instead of rubbery.
- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Beat the egg in a bowl with an electric mixer for 1 minute, then add ricotta, parmesan, and salt and whisk until smooth.
- 2. Sprinkle coconut flour, xanthan gum, and psyllium husk powder over the mixture, whisk to combine, then stir with a spatula until the dough comes together and refrigerate for 1 hour (or freeze for 15 minutes).
- 3. Divide the chilled dough into quarters, oil your hands, and roll each portion into a thin rope, then cut into 1 to 1.5 inch pieces.
- 4. Shape each piece using a gnocchi board (press gently with your thumb while rolling) or a fork (roll into a ball and press with fork tines).
- 5. Arrange shaped gnocchi on a parchment-lined baking tray and freeze for 20 minutes until firm but not completely frozen.
- 6. Melt butter in a pan over medium heat, add gnocchi and minced garlic, and fry for 1.5 minutes on the first side.
- Cook eggs just until set so they stay tender instead of rubbery.
- 7. Carefully flip each piece, add sage leaves, and cook another 1.5 minutes until golden on both sides, then serve with cracked black pepper.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
