- 1 cup heavy cream
- ⅓ cup almond milk
- ⅓ cup erythritol
- 1 tablespoon cornstarch or arrowroot powder
- ¼ teaspoon xanthan gum
- 2 large whole eggs
- 3 large egg yolks
- 2 teaspoons vanilla
- ½ teaspoon stevia glycerite (or more erythritol)
- ¾ teaspoon granulated gelatin sprinkled over 1 Tbsp water ((I used Knox))
- 2 tablespoons butter
- 1 pinch salt

Cook eggs just until set so they stay tender instead of rubbery.
- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Place a strainer near the stove, then heat cream and almond milk in a medium saucepan over medium-low heat until simmering.
- 2. Whisk together erythritol, cornstarch, xanthan gum, and salt in a heatproof bowl, then whisk in 2 whole eggs and 3 egg yolks until smooth.
- 3. When cream simmers, turn off heat and slowly pour all the cream into the egg mixture while whisking continuously, then return everything to the pot.
- 4. Cook over medium-low heat while whisking; the mixture will thicken slightly after about 2½ minutes, then thicken more rapidly at the 3 to 3½ minute mark—whisk briskly and cook 1 minute more without boiling.
- 5. Remove from heat and whisk vigorously for another minute, then whisk in vanilla, stevia glycerite, butter, and gelatin that has been sprinkled over 1 tablespoon water.
- Cook eggs just until set so they stay tender instead of rubbery.
- 6. Pour the pastry cream through the strainer into a bowl, press plastic wrap directly onto the surface, and refrigerate 8 hours to overnight to allow the gelatin to set fully.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
