- 15 drops liquid stevia
- 1 tablespoon coconut oil
- 1 scoop Vital Proteins Vanilla & Coconut Water Collagen Peptides
- 1 pinch salt
- 1 tablespoon unsweetened shredded coconut

- Prep and chill the ingredients before assembling so the finished dish stays crisp and cold.
- 1. Combine almond butter, 1/4 cup shredded coconut, matcha collagen, stevia, and coconut oil in a food processor and blend until smooth.
- 2. Pulse in collagen peptides and salt until mixture comes together, chilling briefly in the refrigerator or freezer if too soft to handle.
- 3. Use a medium cookie scoop to portion dough into balls, roll each ball in the remaining 1 tablespoon shredded coconut, and refrigerate in an airtight container for up to 1-2 weeks.
