- 1 lb ground pork or Italian sausage
- ½ medium onion, chopped
- ½ green bell pepper, chopped
- 2 teaspoon chili powder
- 1 teaspoon garlic powder
- ½ teaspoon ground cumin
- 10 oz can diced tomatoes & green chiles (Rotel)
- 8 low-carb flour tortillas
- 3 cups shredded Mexican blend cheese
- 6 eggs
- 1 ½ cups milk of choice
- ½ cup heavy whipping cream
- ¾ teaspoon salt
- ½ teaspoon black pepper

Cook pork to 145F, then rest it for 3 minutes before slicing.
- 1. Preheat your oven to 350°F and coat a casserole dish with cooking spray.
- 2. Heat avocado oil in a large skillet over medium-high heat, then brown the ground sausage until fully cooked through.
- 3. Add the onion and bell pepper to the skillet and cook until softened, then stir in chili powder, garlic powder, and cumin.
- 4. Mix in the diced tomatoes with green chiles and simmer for 10 minutes until most of the liquid evaporates, then remove from heat.
- 5. Cut each tortilla in half and layer half the tortilla pieces in the prepared dish, followed by half the sausage mixture and half the cheese; repeat the layers once more.
- 6. Whisk together eggs, milk, heavy cream, salt, and pepper in a medium bowl, then pour evenly over the casserole layers.
- Cook pork to 145F, then rest it for 3 minutes before slicing.
- 7. Cover the dish with aluminum foil and bake for 50-60 minutes until the center is set and no longer jiggly.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
