4 servings- 1 lb ground beef
- 3 tbsp taco seasoning
- 6 large eggs
- 4 ounces shredded cheddar or Mexican cheese
- Salsa, guacamole, and sour cream

Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Cook ground beef in a skillet over medium heat, breaking it into crumbles with a wooden spoon. When nearly done, stir in taco seasoning and continue cooking until meat is fully cooked through. Remove from heat and allow to cool.
- 2. Heat oven to 350°F and prepare a mini muffin pan by greasing well with butter or lining with silicone or parchment liners.
- 3. Beat the eggs in a large bowl, then stir in the cooled taco meat and half the shredded cheese, mixing thoroughly.
- 4. Divide the mixture among the mini muffin cups and top each with remaining cheese. Bake 15-20 minutes until puffed and firm when touched.
- 5. Cool in the pan 10 minutes, then run a thin spatula around each muffin to release.
- Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- 6. Serve warm with salsa, sour cream, and guacamole for dipping.
