- 1 pound ground beef (90% lean)
- 1 cup crushed pork rinds
- 1 large egg
- 2 tablespoons heavy cream
- 2 tablespoons water
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon oregano
- 6 ounces mozzarella (cut into 12 small cubes)
- 1 cup marinara
- 2 tablespoons chopped parsley

Cook pork to 145F, then rest it for 3 minutes before slicing.
- 1. Set your oven to 400°F to preheat.
- 2. Combine ground beef, crushed pork rinds, egg, heavy cream, water, garlic powder, onion powder, and oregano in a bowl, mixing thoroughly with your hands.
- 3. Divide the mixture into 12 portions and flatten each into a small patty.
- 4. Place a mozzarella cube in the center of each patty and carefully wrap the meat around it, sealing completely to prevent leaking.
- 5. Arrange meatballs in a greased 9x13-inch baking dish or 12-inch cast iron skillet.
- 6. Bake for 15 minutes, then remove from oven and spoon marinara evenly over each meatball.
- Cook pork to 145F, then rest it for 3 minutes before slicing.
- 7. Garnish with chopped parsley before serving.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
