Cook eggs just until set so they stay tender instead of rubbery.
- 1. Preheat your oven to 150°C/300°F and line a cookie sheet with parchment paper.
- 2. Beat the egg yolks with the softened cream cheese using a hand mixer until smooth, then set aside.
- 3. In a clean bowl, whip the egg whites with cream of tartar and salt until stiff peaks form.
- 4. Gently fold one-quarter of the yolk mixture into the whites until just combined, then fold in the remaining yolk mixture.
- 5. Scoop 1/4-cup portions of the batter onto the prepared cookie sheet, leaving space between each round.
- Cook eggs just until set so they stay tender instead of rubbery.
- 6. Bake for 15-20 minutes until golden brown and the centers no longer jiggle when moved, then cool and gently peel off the parchment before using or storing.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
