- 4 cups bow tie pasta or cauliflower florets (cut into 1" pieces)
- 1 cup cherry tomatoes (halved)
- 1 cup mozzarella cubes
- 1 cup black olives (pitted)
- 1 cup pepperoni minis
- ½ cup green bell pepper (diced)
- ½ to 1 cup Seeking Good Eat's Zesty Italian Dressing or store-bought
- 2 tablespoons fresh basil (chopped)
- Salt and pepper to taste

- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Boil the bow tie pasta following package directions, then drain and rinse under cold water to stop the cooking.
- 2. If using cauliflower instead, cut into 1-inch pieces and microwave covered with ¼ cup water for 3-4 minutes until crisp-tender, then drain and rinse with cold water.
- 3. Combine the pasta or cauliflower with cherry tomatoes, mozzarella cubes, black olives, pepperoni, bell pepper, and fresh basil in a large mixing bowl.
- 4. Pour in ½ cup dressing for cauliflower or 1 cup for pasta, toss everything together, cover, and refrigerate for at least 2 hours.
- 5. Before serving, taste and adjust salt, pepper, and dressing as needed.
