- 2 tbsp chopped fresh rosemary
- ¾ tsp salt
- ½ tsp garlic powder
- 1 ½ lbs sockeye salmon filets (cut into four pieces)
- 2 tbsp olive oil

Cook fish until it flakes easily and reaches about 125F to 130F in the thickest part.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Heat your oven to 400°F and prepare a baking dish with cooking spray.
- 2. Pulse the pecans, rosemary, salt, and garlic powder in a food processor until the nuts are finely ground.
- 3. Dry the salmon pieces thoroughly and arrange them skin-side down in the dish.
- 4. Coat the tops with olive oil, then cover with the pecan mixture and press gently so it sticks.
- Cook fish until it flakes easily and reaches about 125F to 130F in the thickest part.
- 5. Bake for 9 to 11 minutes until the fish flakes when tested with a fork.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
