- 2 tbsp olive oil
- 1 tbsp tamari
- 1 medium hot chili pepper (chopped)
- 4 cloves garlic (chopped)
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- ½ teaspoon ground coriander
- ½ teaspoon dried oregano
- ½ tsp salt
- ½ tsp pepper
- Dash hot sauce (optional)
- 6 bone-in chicken thighs
- ½ cup fresh cilantro leaves
- 1 tsp chili powder
- 2 cloves garlic (coarsely chopped)
- ¼ cup mayonnaise
- 2 tbsp water
- Salt and pepper to taste

Cook until the thickest piece reaches 165F and the juices run clear.
- Preheat the grill to medium-high heat, about 400F, and oil the grates so the food releases cleanly.
- 1. Blend lime juice, olive oil, tamari, chili pepper, garlic, paprika, cumin, coriander, oregano, salt, pepper, and optional hot sauce into a coarse puree.
- 2. Coat the chicken thighs with the marinade in a large dish, turning to cover all sides, and refrigerate for 1 to 4 hours.
- 3. Set up your grill for indirect heat and place the thighs skin-side down over direct heat, grilling for 4-5 minutes until nicely browned with grill marks.
- 4. Flip the chicken and grill another 4-5 minutes over direct heat, then move to the indirect heat zone.
- 5. Continue cooking until the internal temperature reaches at least 165°F on an instant-read thermometer.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 6. Blend cilantro, chili powder, garlic, mayonnaise, and water until smooth for the sauce, adjust seasoning, and drizzle over the finished chicken.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
