4 servings- 4 8-oz Steaks ((must be 1.5 to 2 inches thick, such as filet mignon, New York strip, or ribeye; at room temperature))
- 2 tbsp Montreal steak seasoning ((or simply 2 tsp salt + 1/2 tsp black pepper instead))
- 2 tbsp Avocado oil
- 4 tbsp Unsalted butter ((optional; softened))
- 4 cloves Garlic ((optional; whole, peeled))

Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- 1. Blot steaks dry, then season all surfaces generously with steak seasoning (½ tablespoon per 8-ounce steak), rubbing it in well.
- 2. Set steaks on a wire rack over a baking sheet and refrigerate uncovered overnight or up to 24 hours to dry the surface.
- 3. Remove from refrigerator 30 minutes before cooking to bring to room temperature, then preheat oven to 200°F.
- 4. Roast steaks in the oven until they reach 110°F for rare (35-45 minutes), 120°F for medium-rare (45-55 minutes), 130°F for medium (55-65 minutes), 140°F for medium-well (65-75 minutes), or 150°F for well-done (75-85 minutes), checking temperature starting at 25 minutes.
- 5. Heat 1 tablespoon oil in a cast iron skillet over medium-high heat for 2 minutes until just smoking.
- 6. Add steaks and sear 1-2 minutes until browned; if using butter and garlic, add them before flipping and baste the steaks with the melted butter while the second side cooks.
- 7. Flip and sear the second side 1-2 minutes, using tongs to sear the edges against the pan as well.
- Cook beef to your preferred doneness and let steaks or larger cuts rest before serving.
- 8. Serve immediately without resting, slicing against the grain.
