- 2 tbs butter
- 1 teaspoon garlic paste or minced garlic
- salt and black pepper
- 10 cherry tomatoes
- ¼ cup chopped herbs, eg basil, parsley, chives, and tarragon

Cook fish until it flakes easily and reaches about 125F to 130F in the thickest part.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Heat the oven to 375°F and lightly oil a baking dish.
- 2. Arrange the cod fillets in the dish, then melt the butter and stir in the garlic before drizzling over the fish.
- 3. Season the fillets with salt and pepper, scatter the cherry tomatoes around them, and sprinkle the chopped herbs over everything.
- Cook fish until it flakes easily and reaches about 125F to 130F in the thickest part.
- 4. Cover the dish with foil and roast for 20 minutes, removing the foil halfway through at the 10-minute mark.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
