- ½ red cabbage
- ¼ cup olive oil
- 1 teaspoon kosher salt
- ¾ teaspoon pepper
- ¼ cup goat cheese crumbles
- ⅛ cup walnuts ((chopped and toasted))
- 1 tablespoon balsamic vinegar ((about 1 tsp per cabbage slice))
- optional: fresh thyme

- 1. Preheat your oven to 425 degrees and line a baking sheet with foil sprayed with nonstick spray.
- 2. Cut the cabbage half into 4 wedges, then drizzle with half the olive oil and sprinkle with half the salt and pepper.
- 3. Roast for 15 minutes, then remove from the oven and flip each wedge over.
- 4. Drizzle the remaining olive oil and seasoning over the flipped wedges and return to the oven for another 15 minutes until tender.
- 5. Transfer the roasted wedges to a serving platter and top with goat cheese crumbles, chopped toasted walnuts, and fresh thyme if desired.
- 6. Drizzle balsamic vinegar over the top (about 1 teaspoon per wedge) and adjust seasoning to taste before serving.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
