- 1 tbsp Avocado oil
- 1 lb Ground Italian sausage
- 1 medium Onion ((diced; ~1 cup))
- ½ cup Carrots ((diced))
- 4 cloves Garlic ((minced))
- 6 cups Chicken bone broth ((or regular chicken broth))
- 5 ½ oz Curly kale ((chopped, stems removed; ~1 bunch))
- 4 oz Cream cheese ((at room temperature; omit for dairy-free))

Cook until the thickest piece reaches 165F and the juices run clear.
- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Warm the avocado oil in a large Dutch oven over medium-high heat, then brown the ground sausage for 8-10 minutes, breaking it into crumbles with your spatula, and transfer the cooked meat to a plate using a slotted spoon.
- 2. In the remaining oil, cook the diced onion and carrot for 8-10 minutes until the onions develop some color.
- 3. Push the vegetables aside to create a space in the center, add the minced garlic, and cook for 1-2 minutes until aromatic before stirring everything together.
- 4. Pour in the chicken broth and scrape up any flavorful bits stuck to the pan bottom, then bring the liquid to a boil and let it simmer for 5 minutes.
- 5. Stir in the chopped kale and the reserved sausage, then continue simmering for another 5 minutes.
- 6. Remove from heat, ladle 2 cups of the hot broth into a blender with the cream cheese, and blend until completely smooth.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 7. Pour the cream cheese mixture back into the pot and stir until the soup is uniformly creamy.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
