- 2 tbs unsalted butter
- 1 tbs olive oil
- 3 zucchini, sliced into coins
- 4 tomatillos, husks removed then sliced into wedges
- 1 tbs onion powder
- 1 teaspoon dried oregano
- salt and black pepper, to taste
- ¼ cup finely grated Parmesan

- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Melt the butter with olive oil in a large skillet over medium heat, then add the sliced zucchini and sauté for 10 minutes, turning frequently.
- 2. Add the tomatillo wedges, onion powder, and dried oregano, then continue cooking until the zucchini is fully tender.
- 3. Season with salt and black pepper to taste and sprinkle the grated Parmesan over the top.
- 4. Use a slotted spoon to transfer the vegetables to a serving dish.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
