- one 4 oz. can whole green chiles, drained well and finely diced
- ¾ cup grated Mexican Blend cheese
- ¼ cup very finely grated Parmesan (the kind in a can is fine)
- ¼ cup buttermilk
- 2 eggs
- 1 ½ cups white whole wheat flour
- ¼ cup Granulated Monkfruit Sweetener
- 1 tsp sea salt
- 1 tsp baking soda
- 1 tsp baking powder

Cook eggs just until set so they stay tender instead of rubbery.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Heat your oven to 350°F and coat a muffin pan or silicone cups with cooking spray.
- 2. Shred the zucchini using a grater or food processor, then wrap it in a clean dish towel and squeeze firmly until no moisture remains; measure out 1½ cups.
- 3. Drain the canned green chiles, remove any seeds if desired, then dice finely and press with paper towels to remove excess liquid; combine in a bowl with the squeezed zucchini, Mexican blend cheese, and Parmesan.
- 4. Whisk the eggs and buttermilk together and stir into the zucchini mixture.
- 5. In a separate bowl, combine the white whole wheat flour, monkfruit sweetener, salt, baking soda, and baking powder, then fold into the wet mixture until just incorporated—the batter will be thick.
- 6. Divide batter among muffin cups, filling each to the top without overflowing, and bake for 45-50 minutes until deeply browned and cooked through.
- Cook eggs just until set so they stay tender instead of rubbery.
- 7. Cool the muffins in the pan for 15 minutes before serving warm, optionally with butter.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
