- ¼ cup black sesame seeds (35g)
- 3 tbsp flax meal (21g)
- 2 tsp olive oil (9g)
- ½ cup water (120ml)
- ¼ tsp salt
- ¼ tsp black pepper

- 1. Preheat your oven to 150°C / 300°F.
- 2. Stir together the white and black sesame seeds, flax meal, olive oil, water, salt, and pepper in a bowl, then let the mixture rest for 20 minutes to thicken.
- 3. Press the mixture onto a parchment-lined 13 x 9-inch baking tray, spreading it evenly with a spatula to create neat edges.
- 4. Use a pizza cutter or knife to score the dough into squares before baking.
- 5. Bake for 45 to 50 minutes until the water evaporates and the crackers turn lightly browned and crisp, adding 5 to 10 minutes if needed for thicker crackers.
- 6. Allow the crackers to cool completely before breaking along the score lines and storing.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
