- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 red bell pepper
- 1 green bell pepper
- 1 yellow onion
- ¼ cup avocado oil, divided
- 2 lb skinless, boneless chicken thighs
- 1 cup shredded Colby Jack cheese
- juice from 1/2 lime, optional
- chopped cilantro, optional

Cook until the thickest piece reaches 165F and the juices run clear.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Combine chili powder, garlic powder, onion powder, salt, and pepper in a small bowl and set aside.
- 2. Slice the bell peppers and onion into thin strips, discarding pepper seeds, then arrange on a foil-lined rimmed baking sheet. Drizzle with 2 tablespoons avocado oil, sprinkle with half the seasoning blend, and broil on the top rack on high for 10 minutes until charred. Remove from oven.
- 3. While vegetables broil, cut chicken thighs into bite-sized strips and toss in a bowl with the remaining oil and seasoning until evenly coated.
- 4. Spread the seasoned chicken over the charred vegetables and return to the oven, broiling on high for 5-10 minutes until the chicken is cooked through.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 5. Scatter shredded Colby Jack cheese over the top and broil 1-2 minutes more until melted, then finish with optional lime juice and cilantro before serving.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
