- 4 tablespoons Guacamole of your choice
- 4 eggs
- ¼ tsp chili powder (see notes)
- ½ tsp Spike Seasoning (see notes)
- salt and fresh ground black pepper to taste (I used some pepper, but not any salt)
- ¼ cup grated cheese
- olive oil or non-stick spray for misting or brushing pan
- ¼ cup Pace Picante Sauce (see notes)

Cook eggs just until set so they stay tender instead of rubbery.
- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Prepare guacamole if making from scratch by mashing avocado with lime juice, hot sauce, salt, and a pinch of chili powder.
- 2. Whisk eggs with chili powder, Spike seasoning, salt, and pepper in a bowl.
- 3. Lightly coat an 8-9 inch skillet with olive oil or cooking spray and warm over low heat for about 1 minute.
- 4. Pour half the egg mixture into the pan and cook for 3 minutes until the bottom is well set, lifting the edge with a spatula to check.
- 5. Sprinkle 2 tablespoons cheese over the entire surface and cook 1-2 minutes more until the cheese begins melting.
- 6. Spread 2 tablespoons guacamole over one half of the omelet and let cook 1 minute.
- 7. Fold the plain side over the guacamole-covered side, cover the pan, and cook 3-5 minutes until cooked through.
- Cook eggs just until set so they stay tender instead of rubbery.
- 8. Transfer to a plate with a wide spatula, top with salsa, and repeat the process for the second omelet.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
