- 2 egg whites (large)
- 2 tsp cinnamon
- 1 tsp ground coffee ((optional))

Cook eggs just until set so they stay tender instead of rubbery.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Heat your oven to 150°C (300°F) and line a baking tray with parchment paper.
- 2. Whip the egg whites until soft peaks form, then gradually incorporate the powdered sweetener and continue beating until stiff.
- 3. Fold in the almond flour, cinnamon, and ground coffee (if using) until a cohesive dough forms.
- 4. Shape the dough into a ball and roll it out between two sheets of baking paper to about 1/2 to 1 centimeter thickness.
- 5. Freeze the rolled dough for approximately 15 minutes to firm it up for easier cutting.
- 6. Remove the top sheet of paper and cut out shapes with a cookie cutter, then transfer to the prepared baking tray.
- Cook eggs just until set so they stay tender instead of rubbery.
- 7. Bake for 12 to 15 minutes, then allow to cool completely before topping with sugar-free icing made from powdered sweetener and water.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
