- ¼ cup / 50g granulated allulose (or powdered erythritol (1/4 cup / 40g))
- 1 cup unsweetened almond milk (240 ml)
- ½ cup heavy cream (120 ml)
- ½ tsp vanilla extract or the seeds from 1 vanilla pod
- ¼ to 1/2 cup rum (60-120 ml, or use cognac or bourbon (or a mix) - optional)
- ½ tsp cinnamon
- ¼ tsp nutmeg
- Freshly grated nutmeg or a good pinch of cinnamon

Cook eggs just until set so they stay tender instead of rubbery.
- Prep and chill the ingredients before assembling so the finished dish stays crisp and cold.
- 1. Combine egg yolks with granulated allulose in a large bowl and whisk until the mixture becomes pale and creamy.
- 2. Add the almond milk, heavy cream, vanilla, cinnamon, nutmeg, and rum if using, whisking until fully incorporated.
- 3. Cover the bowl and refrigerate for at least 1 hour or up to overnight to allow flavors to meld.
- 4. Just before serving, whisk the egg whites with 1 tablespoon allulose until fluffy peaks form, then gently fold into the chilled eggnog mixture.
- Cook eggs just until set so they stay tender instead of rubbery.
- 5. Pour into glasses and garnish with freshly grated nutmeg or a pinch of cinnamon.
- Taste before serving and adjust the salt, lemon, vinegar, or herbs so the flavors stay bright.
