- ½ teaspoon kosher salt per pound of meat
- ¼ cup golden monk fruit
- ¼ cup paprika
- 2 tablespoons garlic powder
- 2 tablespoons black pepper
- 2 tablespoons ground ginger
- 2 tablespoons onion powder
- 2 teaspoons dried rosemary

Cook pork to 145F, then rest it for 3 minutes before slicing.
- Preheat the pellet smoker to 225F to 250F and let the heat stabilize before adding the food.
- 1. The night before cooking, rinse the pork shoulder and pat completely dry, then rub salt all over using ½ teaspoon kosher salt per pound of meat and refrigerate overnight.
- 2. Mix together the golden monk fruit, paprika, garlic powder, black pepper, ground ginger, onion powder, and dried rosemary to create the dry rub.
- 3. Wet your hands and dampen the pork to help the rub adhere, then massage the seasoning mixture all over the entire surface of the meat.
- 4. Cook at 225°F in a smoker, oven, or pellet grill for 8 to 12 hours until the internal temperature reaches 195°F to 203°F.
- Cook pork to 145F, then rest it for 3 minutes before slicing.
- 5. Shred the cooked pork using meat claws or two forks.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
