- 1 pound green beans, washed and trimmed
- 4 slices bacon, diced
- ¼ cup onion, finely chopped
- 2 tsbp apple cider vinegar
- 2 tbsp water
- 1 tbsp Low carb brown sugar ((or brown sugar for not low carb))
- ¼ tsp salt
- 1 tsp whole grain mustard

- Set a large skillet or saute pan over medium to medium-high heat and keep the ingredients close so the cooking stays fast and even.
- 1. Cook green beans using your preferred method (steaming, boiling, or microwaving) until tender, then drain well.
- 2. While beans cook, place diced bacon in a medium-large skillet over medium heat and cook 4 minutes until nearly crispy, then add chopped onion and sauté until softened.
- 3. Stir in cider vinegar, water, and brown sugar (or low-carb substitute), let reduce slightly, then add whole grain mustard.
- 4. Add the drained green beans to the skillet, toss to coat and heat through, then season to taste with salt and pepper.
- 5. Serve hot.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
