- 1 large Egg White
- 1 teaspoon water
- ⅓ cup powdered erythritol
- ½ teaspoon cinnamon (ground)
- ½ teaspoon Ginger (ground)
- ½ teaspoon cloves (ground)
- ¼ teaspoon Allspice
- 1 pinch Salt
- ½ pound raw pecan nuts

Cook eggs just until set so they stay tender instead of rubbery.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Set your oven to 110C/225F.
- 2. Whisk the egg white with water in a mixing bowl until soft peaks form.
- 3. Gently fold the powdered erythritol, cinnamon, ginger, cloves, allspice, and salt into the egg whites.
- 4. Add the pecans and fold until they're evenly coated with the spiced mixture.
- 5. Spread pecans on a parchment-lined cookie sheet and bake for 15-20 minutes, stirring every 5 minutes.
- Cook eggs just until set so they stay tender instead of rubbery.
- 6. Allow the pecans to cool and harden at room temperature for 1 hour before storing in an airtight jar for up to 3 weeks.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
