- 1 pound mushrooms (rinsed and wiped)
- 3 cloves garlic (sliced)
- ½ tsp dried basil
- 1 ½ cup Marinara Sauce
- 15 oz whole milk ricotta cheese
- 3 cups grated mozzarella cheese ((divided use)(12 oz))
- ½ cup (30 g) Parmesan cheese,
- 1 large egg (beaten)

Cook eggs just until set so they stay tender instead of rubbery.
- Preheat the oven to 425F and line or lightly grease the pan you plan to use.
- 1. Trim the eggplant ends and slice lengthwise into eight 1/4-inch planks, then arrange them on two oiled baking sheets and bake at 375 degrees for 6-8 minutes per side until tender; set aside.
- 2. Pulse the mushrooms in a food processor until pea-sized, then sauté sliced garlic in 1 tablespoon olive oil over medium heat until fragrant, add the mushrooms, and cook until most moisture evaporates.
- 3. Stir in 1 cup marinara sauce and dried basil, simmering until the mixture thickens considerably.
- 4. Mix the ricotta with the beaten egg, 1 1/2 cups mozzarella, and 1/3 cup Parmesan until well combined.
- 5. Spread 1/2 cup sauce in the bottom of your lasagna pan, layer 4 eggplant slices, half the ricotta mixture, and half the mushroom ragù; repeat the layers and top with remaining mozzarella and Parmesan.
- Cook eggs just until set so they stay tender instead of rubbery.
- 6. Cover with parchment and foil, bake at 375 degrees for 30 minutes covered, then 10 minutes uncovered, and let rest 10-15 minutes before cutting into 8 portions.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
