6 servings- 1 5-lb Whole chicken
- 1 large Yellow onion ((cut into large pieces))
- 6 tbsp Unsalted butter ((softened at room temperature; plus more for greasing the slow cooker))
- 1 head Garlic ((4 cloves minced, remaining ones peeled and whole))
- 12 sprigs Fresh thyme ((divided; half whole sprigs and half leaves only))
- 4 sprigs Fresh rosemary ((divided; half whole sprigs and half chopped))
- 2 tsp Fresh parsley ((chopped))
- 2 tsp Sea salt
- ½ tsp Paprika
- ½ tsp Black pepper

Cook until the thickest piece reaches 165F and the juices run clear.
- 1. Pat the chicken completely dry with paper towels, then mash together the softened butter, 4 minced garlic cloves, half the thyme (chopped), half the rosemary (chopped), parsley, salt, paprika, and pepper.
- 2. Grease the slow cooker bottom with butter, add the onion pieces, and place the chicken breast-side up on top of the onions.
- 3. Carefully separate the skin from the meat over the breast, thighs, and legs, then rub half the herb butter underneath the skin and spread the remaining butter over the outside of the chicken.
- 4. Stuff the cavity with the remaining whole garlic cloves, whole rosemary sprigs, and whole thyme sprigs, tie the legs together with twine, and ensure the chicken sits elevated on the onions.
- 5. Cover and cook on Low for 5 to 8 hours or High for 3 to 4.5 hours until the internal temperature reaches at least 160 degrees F.
- 6. Discard the onions and reserve the cooking liquid for broth; optionally broil the chicken 4 to 6 minutes until the skin crisps and browns.
- Cook until the thickest piece reaches 165F and the juices run clear.
- 7. Let the chicken rest for 10 minutes under foil before carving.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
