- 4 medium zucchini
- ½ tablespoon kosher salt
- 1 cup heavy cream
- 2 ounces cream cheese
- 2 cups shredded cheddar (divided)
- ½ cup shredded gruyere (divided)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon ground mustard
- pepper (to taste)

- 1. Slice zucchini into quarter-inch rounds, arrange on paper towels, sprinkle with salt, and let sit 45 minutes to draw out moisture.
- 2. Preheat your oven to 400°F.
- 3. Heat the cream and cream cheese in a small saucepan over low heat, stirring until the cream cheese melts and the mixture is hot.
- 4. Whisk in the garlic powder, onion powder, and ground mustard, then remove from heat and stir in 1½ cups cheddar and ¼ cup Gruyere until smooth.
- 5. Pat the zucchini dry, removing excess salt, then layer half in a greased 8x8 baking dish and season with pepper.
- 6. Spoon half the cheese sauce over the zucchini, add the remaining zucchini, top with remaining sauce, and sprinkle with remaining cheeses.
- 7. Bake uncovered for 30-35 minutes, then let rest 5 minutes before serving.
- Taste and adjust the seasoning at the end, then serve while everything is hot or freshly chilled.
